2021 Optimism Moon Mountain District
Wine Notes Print tech sheet
Crafted with members in mind, our flagship wine captures the eternal optimism that is at the heart of everything we do at Pangloss Cellars. Each year, Winemaker Erich Bradley meticulously selects his favorite barrels of Bordeaux varieties to compose a blend that represents the best of the vintage. In 2021, Cabernet Sauvignon takes the lead, providing structure, fragrant aromatics, and elegant power. Malbec makes a bold statement in this vintage, contributing inky depth, plush tannins, and a distinctive floral character that elevates the blend. A touch of Merlot adds softness and roundness, weaving the components together seamlessly. 2021 Optimism displays a harmonious balance which promises to gain complexity for many years to come.
Suggestions
- Comté, aged gruyère, Stilton blue cheese
- Braised short ribs, grilled ribeye with chimichurri
- Charred broccolini with garlic, roasted Brussels sprouts with bacon
- Dark chocolate
What our team is saying:
"Optimism is my favorite wine to break out during any kind of prime-rib scenario, although it feels just as at-home in the midst of a dark chocolate pairing. Either way, hunker down next to the fireplace with a glass all on its own afterwards to maximize your results."
